Tiny Spicy Chicken

This is a favorite of ours! It does take a little bit of time to do it, but it so worth it! It is also a way to get a little bit of chicken to go a long ways.

1-2 chicken breasts
2 eggs, beaten
cornstarch
3/4 c. sugar
4 T. ketchup
1/2 tsp garlic salt
1/2 c. vinegar
1 T. soy sauce

Dip chicken in eggs, then cornstarch. Deep fry until the cornstarch crisps up a little, this only takes a few minutes.

Sauce: mix together the remaining ingredients. Heat sauce until dissolved. Pour over fried chicken and bake at 350 degrees for 30 minutes, stirring every 15 minutes.

This is great over my homemade fried rice.
